The dough which is used for making foods such as dosa, biscuit and bread etc. are fermented by bacteria or yeast (Saccharomyces cerevisiae). The puffed-up appearance of dough is due to the production of gas. Bacteria are present in the atmosphere and the yeast has to be added to the dough.
